I made some apple cinnamon muffins on Sat. Amended the recipe for banana muffins kindly given to me by my friend Shirley.
Brought 3 to my mother to try on Saturday and kept 2 for myself. Called her just now and found that she has lost her voice.
My, hope it is not due to the muffins. Must put less oats next time. No, must not let her try muffins next time, as she finished all on her own. I thought she would share them with her colleagues. Guess this is motherly love. She ate them all as they were from me. I professed to learn other no-so-heaty bakes for her next time. Here is my
apple cinnamon recipe (makes about 5 muffins):
1 cup self-raising flour
1/2 cup oats
5 oz sugar (reduced portion)
60g melted butter
1/2 cup milk
1 egg, beaten
1/3 cup diced apples
1/2 teaspoon cinnamon powder
1/2 teaspoon baking powder
1. Preheat oven to 210 degrees.
2. Sift flour, cinnamon powder and baking powder into mixing bowl and add oats and sugar. Stir well. Make a well in the centre.
3. Add melted butter, milk, eggs, apple in a bowl. Add to the flour mixture all at once.
4. Use a wooden spoon, stir until just mixed. Note, do not overbeat, else the muffins would turn out hard.
5. Spoon mixture in muffin cups.
6. Bake for 15 mins. Remove, and cool on rack before serving.
